Hidden Calories That Stall Keto

Low-carb does not mean low-calorie: added fats in coffee, fat bombs, nuts, cheese, alcohol and sauces are the most common reasons a stalled keto dieter is eating more than they think.

Why low-carb foods can still stall you

Keto controls carbs. It does not cancel calories. Fat loss still needs an energy deficit, and in a metabolic ward study, cutting fat calories led to more body-fat loss per day than cutting the same calories from carbs (Hall et al., 2015).

The problem is that fat is dense. Gram for gram, it carries more energy than protein or carbohydrate. Foods that are almost pure fat can add a lot of energy without adding much fullness.

KetoDick on this: he tells people trying to lose weight to stop "pushing the fats" (from the video) once they are past the first month. Eating fat, he says, does not bring on ketosis; restricting carbs does (video NUJNFG6lLWw).

Protein and fiber work the other way:

So the calories most likely to hide are fat calories that come without protein or fiber.

The usual suspects

Food or habit Why it hides What to check
Butter, oil or cream in coffee Drinks rarely feel like a meal How many cups, how much added per cup
Fat bombs Pure fat, small size How many a day
Nuts and nut butters Eaten from the bag or jar Weigh one "handful" once
Cheese Snacked on, sprinkled on everything Weigh what you actually use
Alcohol Calories with no fullness Drinks per week, mixers
Sauces, dressings, mayonnaise Poured, not measured Tablespoons, not "some"
Cooking fat Added at the stove and forgotten How much goes in the pan

You do not have to give any of these up. You need to know how much of each you eat.

Coffee and fat bombs

Bulletproof-style coffee (coffee blended with butter, MCT oil or coconut oil) and fat bombs were made to help people hit high fat targets. For someone trying to lose body fat, that target is the problem.

KetoDick on this: he says keto does not require bulletproof coffee. He likes heavy cream in his own coffee, but worries that a daily bulletproof coffee is a lot of fat with little other nutrition. He prefers fats from foods such as salmon, avocado or chuck roast (video DLRlphyc1t8). He calls fat bombs mostly empty calories that get video views, suggests making them quarter-sized, and says to eat real fatty meat instead (video xyEZL0HuejI). He names coconut oil, butter, cream cheese and mayonnaise as the empty-calorie concern (video cTGYIFOTPl8).

See bulletproof coffee and the blog post on fat bombs and weight loss.

Nuts, cheese and dairy

Nuts and cheese are filling, cheap and keto-friendly. They are also easy to overeat, because the portion you picture is often smaller than the portion you eat.

Nuts carry carbs too, which add up across a day. KetoDick on this: he names nuts and pasta sauces as places hidden carbs show up (video LbPnm9T0oxc).

Dairy is optional on keto. KetoDick treats cutting dairy as an extra rule to try only after the bigger steps, such as checking the sugar in creamers, milk and juice (video qfy0IBkPF4A). He also says every added restriction is extra work that can hurt how well you stick to a diet (video LbPnm9T0oxc).

A practical middle path: weigh your usual portion of nuts and cheese for one week. If the numbers surprise you, cut the portion before you cut the food. See is dairy keto? and do nuts kick you out of ketosis?.

Alcohol

Spirits and some light beers carry few carbs, but they still carry calories. Alcohol also brings no fullness, and it can lower your guard around food.

KetoDick on this: he says the body processes alcohol first, pausing fat burning, and that heavy beers such as IPAs carry many carbs. After a night of drinking he suggests water and a morning walk (video xyEZL0HuejI). He also mentions logging about 500 calories of alcohol at a festival and still finishing under his calorie target (video DoSUgIr2rNo).

The evidence pages behind this guide do not cover alcohol. If you drink and have stalled, log every drink for a week and see what share of your intake it is. See can you drink alcohol on keto?.

Sauces, dressings and cooking fat

These are the least tracked foods on any diet. A drizzle of oil in the pan and a pour of dressing on a salad can match a small meal.

KetoDick on this: he warns about sweet, teriyaki-type sauces (video qfy0IBkPF4A) and calls dry seasonings "the number one free kind of calorie" (from the video), a swap for sugary sauces (video hHFu6L-yedE).

How to audit a week

One honest week of tracking finds most hidden calories. Here is a simple method.

  1. Pick a normal week. Not a holiday, not a "good" week. Eat the way you usually eat.
  2. Log everything. Every drink, every bite, every spoon of oil, cream or sauce. Log as you go, not at night from memory.
  3. Weigh the dense foods. Use a kitchen scale for fats, nuts, cheese and dressings. These are where guesses are furthest off.
  4. Set the app to maintain, not lose. You want an honest picture of what you eat, not a target that builds in a big cut.
  5. Look at the weekly total, not single days. One big day matters less than the pattern.
  6. Sort by calories. List your top ten sources for the week. The hidden ones are usually near the top.
  7. Change one thing. Shrink the biggest low-value source first. Keep protein and vegetables the same.

KetoDick on this: he recommends tracking food, carbs and calories while you are learning, because it helps diagnose problems, and says just tracking food tends to make people eat better (video LbPnm9T0oxc). For MyFitnessPal he says to set the goal to maintain weight, not lose 1.5 to 2 pounds a week (video DoSUgIr2rNo). He reports that his own fat intake was only about 10 g higher than before keto; his appetite fell and he ate roughly 1,000 fewer calories (video uXzscHudgt0).

The goal of the audit is information, not guilt. If tracking every bite makes you anxious, or you have a history of an eating disorder, talk to your doctor or a therapist before doing it; see eating disorders.
