Hidden Carbs: Sauces, Nuts, Maltodextrin and Drinks
The carbs that stall people on keto are usually not in bread or pasta but in sauces, nuts, drinks, creamers and fillers like maltodextrin, and the label's Total Carbohydrate line and ingredients list are how you find them.

The usual suspects
| Source | Why it adds up | Named by KetoDick in |
|---|---|---|
| Pasta sauces | Added sugar, tomato, portions larger than the serving size | Video LbPnm9T0oxc |
| Sweet sauces (teriyaki-type) | Sugar is often a main ingredient | Video qfy0IBkPF4A |
| Nuts | Easy to eat several servings without noticing | Video LbPnm9T0oxc |
| Maltodextrin | A filler with a high glycemic index | Video ffwBPoKxlDI |
| Creamers, milk, juice | Sugars in drinks are easy to forget | Video qfy0IBkPF4A |
| Heavy beers | Carb-dense compared with spirits and light beer | Video xyEZL0HuejI |
KetoDick on this: In his lazy-keto video he says counting carbs matters most for people who do not yet know foods well, because "surprising foods like nuts or pasta sauces" can carry sugars and carbs (from the video) (video LbPnm9T0oxc).
Sauces and dressings
Sauces are the most common hidden source because they are poured, not measured.
- Tomato and pasta sauces: check Total Carbohydrate per serving, then compare the serving size with what you actually use.
- Sweet glazes and stir-fry sauces: teriyaki-type sauces are in the step of his taper where he says to cut sauces (video qfy0IBkPF4A).
- Dressings: a high-fat dressing on a salad is part of his suggested meal (video qfy0IBkPF4A); sweet or "light" dressings often trade fat for sugar, so check the label.
Thickeners are another route. KetoDick suggests xanthan gum in place of flour to thicken sauces (video UygKGoP_BtA).
Nuts
Nuts are low-carb per serving, but a serving is small and a bag is not. The carbs and the calories both add up. See Hidden calories for the calorie side.
How to keep nuts in without the surprise:
- Read the serving size on the bag.
- Portion one serving into a small dish instead of eating from the bag.
- Log them, at least for the first month (see Tracking in month one).

Maltodextrin and other fillers
Maltodextrin is a starch-based powder used as a bulking agent. It shows up in powdered sweetener packets, seasoning mixes, protein powders and some "sugar-free" products.
KetoDick on this: He names maltodextrin as an example of the hidden, high-glycemic ingredients worth watching, and contrasts that with "keto police" who pile on extra restrictions from books and diet gurus (video ffwBPoKxlDI). His point is that the hidden ingredient matters more than the food's reputation.
Other added starches and sugars to look for in the ingredients list: dextrose, corn syrup, rice flour, modified food starch. For why a high-glycemic ingredient matters more in some doses than others, see glycemic index vs glycemic load.
Drinks: creamers, milk, juice and alcohol
Drinks hide carbs because people do not think of them as food.
- Creamers and milk: sweetened creamers and milk carry sugar. KetoDick says to check sugars in creamers, milk and juice once the obvious starches are gone (video qfy0IBkPF4A). For coffee, he suggests heavy cream diluted with water, with a little erythritol if you miss the sweetness of milk (video xyEZL0HuejI).
- Juice: treat it as sugar, not as fruit.
- Alcohol: he says light beers and spirits are low or zero carb, while heavy beers such as IPAs carry many carbs. He also notes the body processes alcohol first, pausing fat burning (video xyEZL0HuejI). More in Can you drink alcohol on keto?
If you take medication for diabetes, alcohol plus low carbs can affect blood sugar; ask your doctor how the two interact for you.
How to spot hidden carbs on a label
- Go to Total Carbohydrate, not the front of the pack.
- Check the serving size and multiply by what you really eat.
- Read the ingredients list. Ingredients are listed by weight, so a sugar or starch near the top matters more.
- Look for the names: sugar, maltodextrin, dextrose, corn syrup, honey, juice concentrate, starch.
- Do not trust "net carbs" claims without doing the math yourself (see Net Carbs vs Total Carbs and Sugar Alcohols).
- Log it once. Once you know a product's real count, you no longer have to look.

Dose, not panic
A hidden carb is a problem because of the amount, not because the food is forbidden.
KetoDick on this: He says there are no banned foods on keto, only doses, and that small amounts of sugar or grain need not break ketosis, especially in a calorie deficit (video ffwBPoKxlDI). He says a few chips at a party are fine if the rest of the day is low carb (video xyEZL0HuejI).
If you are stalled, hidden carbs and hidden calories are the first two things to check. See Why am I not losing weight on keto? and the dose-based food list.
